  • 2 tablespoons lemon juice

Instructions

  1. Peel and slice peaches, leaving skins on or peeling for smoother texture. Toss peaches with granulated sugar, cinnamon, lemon juice, and vanilla extract in a large bowl. Let sit to release juices.
  2. In a mixing bowl, whisk together 1 1/2 cups (190g) flour, baking powder, brown sugar, and salt. Cut in cold cubed butter using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized bits.
  3. Pour in milk or buttermilk and stir gently until just combined; dough should be slightly sticky. Do not overmix.
  4. Transfer peach filling to a 9×13-inch baking dish and spread evenly. Sprinkle remaining 1/2 cup (65g) flour over peaches to absorb excess juice.
  5. Drop spoonfuls of biscuit dough over peach mixture, covering as much as possible but gaps are fine.
  6. Preheat oven to 375°F (190°C). Bake cobbler on middle rack for 40 to 45 minutes until biscuit topping is golden brown and peach filling is bubbly.
  7. Let cobbler cool for at least 15 minutes before serving. Optionally top with vanilla ice cream or whipped cream.
