Description
A creamy, indulgent breakfast made by soaking steel-cut oats overnight and topping with caramelized bananas for a sweet, buttery treat.

- ½ cup steel-cut oats (90g)
- 1½ cups milk (360ml) – any kind (whole, almond, oat, coconut)
- ¼ cup Greek yogurt (60g) – optional
- 1 tablespoon maple syrup (15ml)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 large banana, sliced
- 1 tablespoon unsalted butter (14g)
- 1 tablespoon brown sugar (12g)
- ½ teaspoon cinnamon
Instructions
- In a jar or bowl, combine steel-cut oats, milk, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt. Stir well, seal, and refrigerate overnight.
- The next morning, heat a small skillet over medium heat and melt the butter. Add brown sugar and cinnamon, stirring to combine.
- Add sliced bananas and cook 2-3 minutes per side until golden and caramelized.
- Warm the soaked oats gently on the stove or microwave until just warm, or eat cold if preferred.
- Spoon oats into a bowl or jar, top with caramelized bananas and pan sauce. Optionally add nuts or nut butter.
Notes
Use room temperature milk for best soaking results. Caramelize bananas on medium heat to avoid burning. Make extra caramelized bananas for toast or pancakes. Store soaked oats up to 4 days refrigerated; add bananas fresh daily.
