Instructions
- Preheat oven to 350°F (175°C).
- Zest the orange, melt the butter, and bring eggs and milk to room temperature.
- In a medium bowl, whisk together flour, baking powder, ground ginger, and salt.
- In another bowl, whisk eggs with honey, sugar, melted butter, milk, vanilla extract, and orange zest until smooth and glossy.
- Gently fold the dry ingredients into the wet mixture with a spatula until just combined; do not overmix.
- Grease a loaf pan or line it with parchment paper.
- Pour the batter into the prepared pan and smooth the top. If using, fold in or sprinkle chopped crystallized ginger or toasted pecans.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- Optional: brush the top with warmed honey for a glossy finish before serving.
