- 1/3 cup (80ml) vegetable oil
- 1/2 cup (120ml) milk (whole milk preferred)
- 2 tablespoons lemon zest (fresh)
- 1/4 cup (60ml) fresh lemon juice
- 2 tablespoons poppy seeds
- 1 teaspoon vanilla extract
- For the Zesty Glaze:
- 1 cup (125g) powdered sugar
- 2–3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
- Zest and juice lemons. Sift together flour, baking powder, and baking soda.
- In a large bowl, whisk together sifted flour, sugar, salt, and poppy seeds.
- In another bowl, whisk eggs until frothy. Add yogurt, vegetable oil, milk, lemon zest, lemon juice, and vanilla extract; whisk until smooth.
- Pour wet ingredients into dry ingredients. Gently fold together with a spatula until just combined; lumps are okay.
- Spoon batter evenly into muffin cups, filling about 3/4 full.
- Bake for 18-20 minutes until a toothpick inserted comes out clean or with a few moist crumbs. Tops should be golden and springy.
- While muffins bake, whisk powdered sugar, lemon juice, and lemon zest in a small bowl until smooth and pourable, adding lemon juice 1 tablespoon at a time as needed.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
- While muffins are still warm, drizzle glaze generously over each muffin. Let glaze set before serving.
Notes
Use fresh lemon zest and juice for best flavor. Do not overmix batter to avoid dense muffins. Use fresh baking powder for proper rise. Glaze consistency can be adjusted by adding more lemon juice or powdered sugar. Room temperature ingredients help with even baking. Grease or line muffin tin to prevent sticking.
