Ingredients
- 2 ½ cups (315g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (225g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 1 large egg, room temperature
- 2 tablespoons fresh lemon zest (about 2 lemons)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup (150g) fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl, cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3-4 minutes.
- Beat in the room temperature egg, vanilla extract, lemon zest, and lemon juice until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
- Gently fold in the fresh blueberries using a spatula, being careful not to crush them.
- Using a cookie scoop or spoon, drop dough balls about 2 tablespoons each onto the prepared baking sheets, spaced 2 inches apart.
- Bake for 15-18 minutes until the edges are golden brown and the tops look set but still soft.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
