  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 1 cup chicken broth (low-sodium)
  • 1 cup heavy cream (full-fat)
  • ½ cup freshly grated Parmesan cheese
  • ½ cup sun-dried tomatoes, packed
  • 4 cups fresh spinach
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil, chopped (for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat butter in a large skillet over medium-high heat. Sear chicken thighs in a single layer (in batches if necessary) for 4-5 minutes per side until golden brown and cooked through (165°F). Remove chicken to a plate.
  3. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the same pan. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and simmer for 3-4 minutes until the sauce thickens slightly.
  6. Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Add fresh spinach and stir until wilted (about 1 minute).
  7. Return chicken thighs and any juices to the pan. Spoon sauce over chicken and let sit for 1 minute to heat through. Adjust seasoning if needed.
  8. Serve immediately topped with fresh basil.

Notes

Pat chicken dry for a better sear. Do not crowd the pan. Remove pan from heat before adding cheese to prevent graininess. This recipe is naturally gluten-free. For dairy-free, use coconut cream and nutritional yeast. For lighter version, use half-and-half.
