  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup plain dried breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 2 teaspoons dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with aluminum foil or parchment paper.
  2. In a medium bowl, combine breadcrumbs and milk. Let sit for 5 minutes to form a panade.
  3. In a large bowl, combine ground beef, the breadcrumb mixture, diced onion, minced garlic, eggs, parsley, thyme, salt, and pepper. Mix gently with hands until just combined; do not overmix.
  4. Press the meat mixture firmly into the prepared loaf pan.
  5. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, and garlic powder to make the glaze.
  6. Bake the meatloaf for 25 minutes. Remove from oven and spread the glaze evenly over the top.
  7. Return to oven and bake for another 15-20 minutes, until the internal temperature reaches 160°F (71°C).
  8. Remove from oven and let rest in the pan for at least 10 minutes before slicing to allow juices to redistribute.

Do not overmix the meat to avoid a dense texture. Use an instant-read thermometer to ensure the internal temperature reaches 160°F. Let the meatloaf rest for 10 minutes before slicing to keep it juicy. If using a loaf pan, drain excess fat after baking.
