Instructions

  1. Brown the butter: Place unsalted butter in a small saucepan over medium heat. Stir frequently until it melts, foams, and turns golden brown with nutty aroma. Remove from heat and pour into a mixing bowl to cool slightly.
  2. Mash the bananas: Peel and mash ripe bananas with a fork until smooth but slightly chunky. Add to the brown butter and stir to combine.
  3. Add sweetener and baking soda: Pour in maple syrup and baking soda. Stir well to combine.
  4. Mix in the oats: Add rolled oats and stir until evenly coated. Fold in any optional nuts, chocolate chips, or cinnamon if using.
  5. Scoop and bake: Drop dough by tablespoonfuls onto a parchment-lined baking sheet, spacing about 2 inches apart. Flatten slightly with the back of a spoon. Bake at 350°F (175°C) for 15-18 minutes until edges are golden and centers are set but soft.
  6. Cool and enjoy: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Best enjoyed slightly warm.

Notes

Use a light-colored pan and stir constantly to avoid burning the butter. Ripe bananas with brown spots add natural sweetness and moisture.
