- 12 medium jalapeños
- 12 slices thick-cut bacon
- 8 oz (225g) cream cheese, softened
- 1 cup (100g) sharp cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika (optional)
- Salt and black pepper, to taste
- 2 tablespoons fresh cilantro or parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Slice each jalapeño in half lengthwise and scoop out seeds and membranes if less heat is desired. Place jalapeño halves on a lined baking sheet.
- In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, pepper, and chopped cilantro or parsley if using. Mix until creamy and well combined.
- Fill each jalapeño half with the cheese mixture, packing it in without overflowing.
- Wrap each stuffed jalapeño half with one slice of thick-cut bacon, securing with a toothpick if needed.
- Place the baking sheet in the oven and bake for 15 minutes.
- Switch oven to broil and broil for 2-3 minutes until bacon is extra crispy and golden. Watch closely to prevent burning.
- Remove from oven and let cool for a few minutes before serving.

Use thick-cut bacon for best results to avoid burning and ensure crispiness. Remove jalapeño seeds and membranes to reduce heat.
