- 1 cup buttermilk
- 2 tablespoons hot sauce
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 large egg
- 1/2 cup mayonnaise
- 2 tablespoons hot sauce
- 1 tablespoon honey
- 1/2 teaspoon smoked paprika
- 4 brioche buns

Instructions
- Marinate the chicken: Combine buttermilk and hot sauce in a bowl. Add chicken fillets, ensuring they’re fully submerged. Cover and marinate for 15 minutes.
- Prepare the breading: Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, and salt in a bowl.
- Bread the chicken: Remove chicken from buttermilk, let excess drip off, and dredge in the flour mixture. Dip back into buttermilk and coat again in flour for a double coating. Shake off excess and set aside.
- Heat the oil: Add 1/2 inch of vegetable oil to a skillet and heat to 350°F (175°C). Test oil with a bit of breading; if it sizzles, it’s ready.
- Fry the chicken: Fry chicken fillets in batches for 8-10 minutes, flipping halfway, until golden brown and cooked through. Transfer to a wire rack to drain.
- Make the sauce: Mix mayonnaise, hot sauce, honey, and smoked paprika in a bowl. Adjust spice level to taste.
- Toast the buns: Spread butter on the cut sides of buns and toast in a skillet until golden brown.
- Assemble the sandwich: Spread spicy sauce on both sides of the bun. Add lettuce, pickles, and crispy chicken fillet. Top with the other half of the bun and serve immediately.
