- 1 lb (450g) baby potatoes, halved
- 1 lb (450g) green beans, trimmed
- 6 slices bacon, chopped
- 1/2 cup (120ml) ranch dressing
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add potatoes and cook for 10–12 minutes until fork-tender. Remove with slotted spoon.
- In the same pot, blanch green beans for 2–3 minutes until bright green and just tender. Drain and rinse under cold water to stop cooking.
- In a large skillet over medium heat, cook chopped bacon until crispy. Remove and drain on paper towel-lined plate. Reserve 1–2 tablespoons of bacon grease in the skillet.
- Add cooked potatoes and green beans to the skillet. Toss to coat in bacon grease and season with garlic powder, onion powder, salt, and pepper.
- Remove from heat. Stir in crispy bacon and ranch dressing until well combined. Serve warm.
Notes
Blanch green beans quickly for the best color and texture. Feel free to use store-bought or homemade ranch dressing. Add a sprinkle of shredded cheese for an indulgent twist!
