Description

Ingredients

  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup (225g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (110g) packed brown sugar
  • 1 large egg, room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ cup (120g) pistachio cream
  • 1 ½ cups (270g) chocolate chips (dark or semisweet)
  • Optional: ¼ cup (30g) chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat. Lightly butter or spray the sides if desired.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar with a hand mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Add the pistachio cream and gently fold it into the wet mixture with a spatula until well distributed.
  6. Slowly add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  7. Fold in the chocolate chips and chopped pistachios if using, being gentle to avoid breaking them.
  8. Using a cookie scoop or spoon, drop rounded tablespoons of dough about 2 inches apart on the prepared baking sheet.
  9. Bake for 12-15 minutes, rotating the baking sheet halfway through, until edges are golden and centers are slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Allow to cool at least 20 minutes before serving.

Notes

If cookies spread too much, chill dough for 30 minutes before baking. Use room temperature butter and egg for best texture. Rotate baking sheet halfway through baking for even cooking. Brush cookies with melted butter right out of the oven for extra shine and flavor. Let cookies cool fully before storing to avoid sogginess.
