- 1 cup unsalted butter, room temperature
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- Pinch of salt
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy—about 3-5 minutes.
- Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, cinnamon, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
- While the cookies are cooling, prepare the icing by whisking together the powdered sugar and milk until smooth.
- Once the cookies are completely cool, drizzle the icing over each one and let them sit for a few minutes to allow the icing to set.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and ensure oats are certified gluten-free.
