  • 16 oz (450g) Cream Cheese
  • 1 cup (200g) Granulated Sugar
  • 1 cup (240g) Sour Cream
  • 3 large Eggs
  • Hot Fudge Sauce
  • Vanilla Ice Cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your brownie mix according to package instructions and pour the batter into a greased 9-inch springform pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let it cool completely on a wire rack.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until well combined. Add the sour cream and vanilla extract, and mix until fully incorporated.
  4. Beat in the eggs, one at a time, mixing just until combined after each addition. Be careful not to overmix!
  5. Once the brownie base is cool, pour the cheesecake filling over the brownie layer, smoothing the top with a spatula.
  6. Bake in the oven for about 50-60 minutes. The center should be set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  8. If making homemade hot fudge, do this once the cheesecake is chilled. Otherwise, warm up your store-bought sauce.
  9. When ready to serve, drizzle warm hot fudge over the cheesecake and top each slice with a scoop of vanilla ice cream.
