- 1 lb ground beef (80/20)
- Salt and pepper to taste
- 1 tbsp Worcestershire sauce
- 1/2 tsp garlic powder
- 2 medium yellow onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/4 cup mayonnaise
- 1 tbsp ketchup
- 1 tsp Dijon mustard
- 1/4 tsp smoked paprika
- 4 brioche buns
- 4 slices cheddar cheese
- Lettuce, tomato, pickles (optional)
Instructions
- Heat butter and olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 10 minutes).
- In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, and smoked paprika to make the special sauce. Set aside.
- In a large bowl, combine ground beef, salt, pepper, Worcestershire sauce, and garlic powder. Mix gently to avoid overworking the meat.
- Divide the meat into 4 equal portions and shape into patties about 3/4 inch thick. Make a small indentation in the center of each patty.
- Heat a skillet or grill over medium-high heat. Cook the patties for 3-4 minutes per side, or until browned and cooked to desired doneness. Add a slice of cheddar cheese to each patty during the last minute of cooking.
- Toast the brioche buns on the grill or in a skillet until golden brown.
- Spread a generous layer of special sauce on the bottom bun. Add lettuce, tomato, and pickles. Top with the cheesy patty and caramelized onions. Finish with the top bun and serve immediately.
