  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground cardamom
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ cup (50g) brown sugar (for glaze)
  • 2 tbsp (28g) unsalted butter (for glaze)
  • 2 tbsp (30ml) milk (for glaze)
  • ½ cup (60g) powdered sugar (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper and set aside.
  2. Mix the dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, cinnamon, cardamom, nutmeg, and cloves. Set aside.
  3. Cream the butter and sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add the wet ingredients: Beat in the eggs, one at a time, followed by the vanilla extract. Mix until smooth and creamy.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet, mixing until just combined. Do not overmix.
  6. Chill the dough: Cover the bowl with plastic wrap and chill the dough in the fridge for 20-30 minutes.
  7. Shape and bake: Scoop tablespoon-sized balls of dough and place them on the prepared baking sheets, spaced about 2 inches apart. Bake for 8-10 minutes, or until the edges are lightly golden.
  8. Cool the cookies: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Make the glaze: In a small saucepan, melt the butter and brown sugar over medium heat, stirring constantly. Add the milk and bring to a gentle boil. Remove from heat and whisk in the powdered sugar and vanilla until smooth.
