Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 3 tablespoons honey (raw or local preferred)
- 2 tablespoons fresh lime juice
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste (kosher salt recommended)
- 1 cup long grain white rice (190g)
- 1 medium ripe avocado
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped cilantro (optional)
- Salt to taste
- 2 cups water or chicken broth (475ml)
Instructions
- Preheat a large skillet over medium heat. Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
- In a small bowl, whisk together honey, fresh lime juice, minced garlic, and olive oil. Set aside.
- Add a little olive oil to the hot skillet. Place chicken breasts in the pan and cook for about 5-6 minutes per side. When chicken is halfway done, pour the honey lime glaze over the chicken, flipping to coat both sides. Cook until chicken reaches 165°F (74°C) internally and has a golden color.
- While the chicken cooks, rinse rice under cold water until water runs clear. Combine rice and water or broth with a pinch of salt in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and rice is tender.
- Once rice is cooked, fluff with a fork and transfer to a mixing bowl. Mash the avocado until smooth. Stir in mashed avocado, lime juice, chopped cilantro, and salt until combined and creamy.
- Slice the honey lime chicken and serve alongside a generous scoop of creamy avocado rice. Garnish with extra cilantro or a lime wedge if desired.
Notes
Pat chicken dry before cooking to ensure caramelized edges. Use fresh lime juice for best flavor. Watch the honey glaze carefully to prevent burning. Rinse rice to remove excess starch. Fold avocado into rice gently to keep it fluffy. Let chicken rest a few minutes before slicing. Store chicken and avocado rice separately to maintain texture. Avocado rice is best fresh and not recommended for freezing.
