Description
A quick and easy creamy strawberry salad with a crunchy rice cereal crackle, ready in 15 minutes. Perfect for potlucks, barbecues, or as a light dessert.
Ingredients
- 4 cups fresh strawberries, hulled and sliced (about 600g / 1.3 lbs)
- 1 cup mini marshmallows (about 50g / 1.75 oz)
- 3 cups plain rice cereal (75g / 2.6 oz)
- 1 cup whipped topping (240ml / 8 fl oz)
- 1/2 cup marshmallow fluff (120g / 4.2 oz)
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- Optional: 1/2 cup chopped pecans or walnuts (60g / 2.1 oz)
Instructions
- Wash, hull, and slice the strawberries into bite-sized pieces. Toss them with sugar in a large mixing bowl and set aside to bring out their natural juices.
- In a separate bowl, combine the whipped topping, marshmallow fluff, and vanilla extract. Stir gently until smooth and creamy.
- Fold the creamy mixture into the sugared strawberries carefully to keep the berries intact and the salad light and fluffy.
- Gently fold in the rice cereal and nuts if using, to add crunch and texture.
- Serve immediately for a softer cereal texture or chill in the fridge for 10-15 minutes to let flavors meld and keep the cereal crisp longer.
Notes
Use fresh, ripe strawberries for best texture and flavor. Fold gently to avoid crushing berries and keep cereal crunchy. Marshmallow fluff is key for creamy texture but can be substituted with sweetened cream cheese or honey and Greek yogurt. Best served fresh or chilled briefly; cereal softens if stored too long. Optional nuts add crunch but can be omitted for nut-free version.
