Ingredients
- 1.5 pounds boneless, skinless chicken thighs
- 8 cloves garlic, minced (about 2 tablespoons)
- 1 teaspoon red chili flakes
- 1/4 cup soy sauce (low-sodium recommended)
- 1 tablespoon toasted sesame oil
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1/2 cup chicken broth (low-sodium recommended)
- 3 stalks green onions, sliced
- 2 medium carrots, julienned or thinly sliced
- 8 ounces rice noodles or thin wheat noodles
- 1 tablespoon fresh ginger, minced (optional)
Instructions
- Prep your ingredients by mincing garlic and ginger, slicing green onions, julienning carrots, and cutting chicken thighs into bite-sized pieces.
- Bring a pot of water to a boil and cook the rice noodles according to package instructions (about 5-7 minutes). Drain and rinse under cold water to prevent sticking. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add chicken pieces in a single layer and sear until golden and cooked through, about 4-5 minutes per side. Remove chicken and set aside.
- Lower heat to medium. Add 1 tablespoon more sesame oil if needed. Toss in minced garlic, ginger, and red chili flakes. Stir constantly for about 30 seconds until fragrant, being careful not to burn the garlic.
- Add soy sauce, honey, rice vinegar, and chicken broth. Stir and let simmer for 2-3 minutes until the sauce slightly thickens.
- Add cooked chicken back into the skillet along with the drained noodles and julienned carrots. Toss everything to coat evenly and cook for another 1-2 minutes to warm through and let noodles soak up the sauce.
- Turn off heat and stir in sliced green onions. Garnish with extra chili flakes or sesame seeds if desired and serve immediately.
