  • 2 pounds boneless skinless chicken thighs
  • 2 cups frozen corn
  • 1/2 cup mayonnaise
  • 1/4 cup Mexican crema or sour cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh lime juice
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1/3 cup fresh cilantro, chopped (optional)

Instructions

  1. Mince the garlic and chop the cilantro.
  2. In a mixing bowl, combine mayonnaise, Mexican crema (or sour cream), lime juice, chili powder, cumin, salt, and pepper. Whisk until smooth.
  3. Place chicken thighs evenly in the bottom of the slow cooker.
  4. Sprinkle frozen corn over the chicken in an even layer.
  5. Pour the mayo mixture evenly over the chicken and corn, spreading gently to coat most of the chicken.
  6. Cover and cook on low for about 4 hours until chicken is tender and sauce thickens.
  7. About 10 minutes before serving, sprinkle grated Parmesan cheese over the top, recover, and let cheese melt.
  8. Garnish with fresh chopped cilantro before serving.
  9. Serve with warm tortillas, over rice, or with a green salad.

Notes

Use fresh lime juice for best flavor. Do not add cheese too early to avoid rubbery texture. If sauce is too thick after cooking, stir in a splash of chicken broth or water. Chicken breasts can be used but may dry out; cook for less time if using breasts. Leftovers reheat well with added liquid to maintain creaminess. For a smoky twist, add smoked paprika or chipotle pepper in adobo sauce.
