Description

  • 4 large yellow onions, thinly sliced (about 600g / 1.3 lbs)
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 2 cups beef broth (480ml)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 3 tablespoons butter (45g)
  • 1 tablespoon Worcestershire sauce (15ml)
  • 1 teaspoon dried thyme
  • 1½ cups shredded Gruyère or Swiss cheese (about 150g)
  • Salt and black pepper, to taste
  • Optional: Fresh parsley for garnish
  • Optional: 1 cup sliced mushrooms (for sauté step)
  • Optional: Baby spinach or kale (added last 15 minutes)

Instructions

  1. Melt butter in a large skillet over medium-low heat. Add thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring occasionally, until golden brown and caramelized (about 15-20 minutes).
  2. Near the end of caramelizing, stir in minced garlic, dried thyme, and Worcestershire sauce. Cook for another minute until fragrant, then remove from heat.
  3. Season chicken breasts with salt and pepper on both sides.
  4. Place chicken breasts in the bottom of the slow cooker. Spoon caramelized onions over the chicken, including garlic and flavorful bits.
  5. Pour beef broth over the chicken and onions.
  6. Cover and cook on high for 4-5 hours or on low for 7-8 hours until chicken is tender and cooked through.
  7. About 15 minutes before serving, sprinkle shredded Gruyère or Swiss cheese evenly over the chicken and onions. Cover and let cheese melt.
  8. Optional: For a golden crust, transfer chicken and onions to an oven-safe dish and broil for 2-3 minutes, watching closely to avoid burning.
  9. Garnish with fresh parsley if desired and serve over mashed potatoes, egg noodles, rice, or crusty bread.
