Ingredients
- 8 oz (225g) cremini or baby bella mushrooms
- 2 medium shallots
- 4 oz (115g) fresh goat cheese (chèvre)
- 1 sheet store-bought puff pastry, thawed
- 2 tablespoons (28g) butter
- 2 cloves garlic
- 1 teaspoon fresh thyme leaves (optional)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 beaten egg
Instructions
- Preheat your oven to 400°F (200°C). Roll out your thawed puff pastry on a lightly floured surface. Cut it into 6 equal squares (about 4×4 inches each). Transfer them to a parchment-lined baking sheet. Use a fork to gently prick the center of each square to prevent excessive puffing. Brush the edges with beaten egg for a golden finish.
- Heat 1 tablespoon olive oil and 2 tablespoons butter in a skillet over medium heat. Add thinly sliced shallots and cook until soft and translucent, about 3 minutes. Add sliced mushrooms and cook until they release moisture and start to brown, about 5 minutes. Add minced garlic and fresh thyme leaves, cooking for another minute until fragrant. Season with salt and pepper. Remove from heat and let cool slightly.
- Spread a generous spoonful of goat cheese in the center of each pastry square, leaving a border around the edges. Top evenly with the mushroom-shallot mixture. Avoid overloading to keep pastry crisp.
- Bake the tarts in the oven for 15-18 minutes until the pastry is puffed and golden brown. Watch closely near the end to prevent burning.
- Let the tarts cool on the baking sheet for at least 5 minutes before serving to allow the filling to set.

Use local mushrooms for better flavor. Let goat cheese sit at room temperature for 15 minutes before spreading. Thaw puff pastry overnight in the fridge to prevent it from becoming too soft.
