  • 12 ounces (340g) egg noodles
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups (475ml) beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cinnamon
  • Salt and black pepper to taste
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente (usually 8-10 minutes). Drain and set aside. Toss with a drizzle of olive oil to prevent sticking.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 6-7 minutes. Drain excess fat if needed.
  3. Push the beef to one side of the skillet. Add the remaining olive oil and chopped onion. Cook until softened and translucent, about 3 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Mix in tomato paste, cumin, oregano, cinnamon, salt, and pepper. Stir to coat the beef and onions evenly.
  5. Add beef broth to the skillet, scraping up browned bits from the bottom. Bring to a gentle simmer and cook for about 7 minutes, allowing the sauce to thicken slightly.
  6. Add the drained noodles and fresh lemon juice to the skillet. Toss gently to combine and heat through.
  7. Remove from heat and stir in chopped parsley. Taste and adjust seasoning if needed. Serve warm.

Drain excess fat from the beef to avoid greasiness. Use fresh lemon juice for best flavor. Cook noodles al dente to prevent mushiness. Stir occasionally while simmering to avoid burning. Adjust salt and pepper according to broth saltiness.
