- 1 pound (450g) beef sirloin or ribeye, cut into 1-inch cubes
- 3 tablespoons (43g) unsalted butter
- 4 large garlic cloves, minced
- 1 tablespoon fresh thyme or rosemary, chopped
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon (15ml) olive oil
Instructions
- Pat the beef cubes dry with paper towels and season generously with sea salt and freshly ground black pepper. Mince the garlic finely, and chop your fresh herbs.
- Place your skillet or cast iron pan over medium-high heat. Add the olive oil and let it heat until shimmering but not smoking.
- Add the beef cubes in a single layer (work in batches if needed to avoid overcrowding). Let them sear without moving for about 2-3 minutes, then use tongs to flip and sear the other sides until browned all around.
- Lower the heat to medium and add the butter, minced garlic, and chopped herbs to the pan. Use a spoon to baste the beef bites with the melted butter mixture. Watch closely so the garlic doesn’t burn.
- Continue basting and cooking until the beef reaches your desired doneness (medium-rare is about 135°F / 57°C).
- Transfer the beef bites to a plate and let them rest for 5 minutes to lock in juices. Pour any remaining garlic butter from the pan over the top before serving.
Notes
Pat beef dry before seasoning to ensure a good sear. Do not overcrowd the pan to avoid steaming. Use a meat thermometer for perfect doneness. Rest beef after cooking to lock in juices. For dairy-free, substitute butter with ghee or plant-based butter alternative.
