Description

These Roasted Grape Tomatoes are bursting with sweet, caramelized flavor and require just a handful of ingredients. Tossed with olive oil, garlic, and herbs, they make the perfect side dish, pasta topping, or salad enhancer. Ready in under 25 minutes, they are a quick and healthy addition to any meal!


Ingredients

  • 1 pint grape tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano (or fresh basil, chopped)
  • ¼ teaspoon red pepper flakes (optional for spice)
  • 1 tablespoon balsamic vinegar (optional for extra depth)

Instructions

  • Preheat & Prepare

    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper for easy cleanup.
  • Season the Tomatoes

    • In a large bowl, toss the grape tomatoes with olive oil, garlic, salt, pepper, oregano, and red pepper flakes (if using).
    • Add balsamic vinegar for extra depth of flavor.
  • Roast to Perfection

    • Spread the tomatoes in a single layer on the baking sheet.
    • Roast for 15-20 minutes, until soft and caramelized. Stir halfway through for even roasting.

    • Let cool slightly and sprinkle with fresh basil.
