  • 4 bone-in pork chops (about 1-inch thick)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced or thinly sliced
  • 1 can (28 ounces) whole peeled tomatoes, crushed
  • 1/2 cup green Castelvetrano olives, sliced
  • 2 tablespoons capers, rinsed
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup dry white wine (optional)
  • Salt and pepper to taste

Instructions

  1. Slice garlic, olives, and herbs. Crush canned tomatoes if using whole ones. Rinse capers. Pat pork chops dry and season with salt and pepper.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once shimmering, add pork chops.
  3. Sear pork chops for 3-4 minutes per side until golden brown. Remove from pan and set aside.
  4. Lower heat to medium and add more olive oil if needed. Sauté garlic for 30 seconds until fragrant.
  5. Add crushed tomatoes, olives, capers, and white wine to the pan. Stir to combine and scrape up browned bits from the pan. Simmer for 5 minutes.
  6. Nestle pork chops into the sauce and spoon some over the top. Cover and simmer for 15-20 minutes until pork is cooked through (internal temperature of 145°F / 63°C).
  7. Sprinkle chopped basil and parsley over the top. Adjust seasoning with salt and pepper if needed.
  8. Serve pork chops with sauce spooned over and garnish with fresh herbs.

Notes

Serve with crusty bread to soak up the sauce. Use good-quality olives for the best flavor. The dish tastes even better the next day, making it great for leftovers.
