- 4 bone-in pork chops (about 1-inch thick)
- 2 tablespoons olive oil
- 3 cloves garlic, minced or thinly sliced
- 1 can (28 ounces) whole peeled tomatoes, crushed
- 1/2 cup green Castelvetrano olives, sliced
- 2 tablespoons capers, rinsed
- 1/4 cup fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 cup dry white wine (optional)
- Salt and pepper to taste
Instructions
- Slice garlic, olives, and herbs. Crush canned tomatoes if using whole ones. Rinse capers. Pat pork chops dry and season with salt and pepper.
- Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once shimmering, add pork chops.
- Sear pork chops for 3-4 minutes per side until golden brown. Remove from pan and set aside.
- Lower heat to medium and add more olive oil if needed. Sauté garlic for 30 seconds until fragrant.
- Add crushed tomatoes, olives, capers, and white wine to the pan. Stir to combine and scrape up browned bits from the pan. Simmer for 5 minutes.
- Nestle pork chops into the sauce and spoon some over the top. Cover and simmer for 15-20 minutes until pork is cooked through (internal temperature of 145°F / 63°C).
- Sprinkle chopped basil and parsley over the top. Adjust seasoning with salt and pepper if needed.
- Serve pork chops with sauce spooned over and garnish with fresh herbs.
Notes
Serve with crusty bread to soak up the sauce. Use good-quality olives for the best flavor. The dish tastes even better the next day, making it great for leftovers.
