These Peaches and Cream Crumble Bars are an easy and delightful dessert that combines juicy peaches with a creamy filling, all nestled beneath a crumbly topping. Perfect for summer gatherings or cozy nights in.
Ingredients
- Fresh Peaches (3-4 medium)
- Granulated Sugar (¼ cup + ½ cup for cream cheese layer)
- All-Purpose Flour (1 cup)
- Rolled Oats (1 cup)
- Brown Sugar (½ cup)
- Unsalted Butter (½ cup, melted)
- Cream Cheese (8 oz, softened)
- Vanilla Extract (1 teaspoon)
- Lemon Juice (1 tablespoon)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- Wash, pit, and slice about 3-4 medium peaches. In a bowl, mix the sliced peaches with ¼ cup of granulated sugar and a tablespoon of lemon juice. Set aside.
- In a mixing bowl, combine 1 cup of flour, 1 cup of rolled oats, ½ cup of brown sugar, and ½ cup of melted butter. Mix until crumbly.
- In another bowl, beat 8 oz of softened cream cheese with ½ cup of granulated sugar and 1 teaspoon of vanilla extract until smooth.
- Press half of the crumble mixture into the bottom of your prepared pan. Spread the cream cheese mixture over the crumble base, then layer the peaches on top. Finish by sprinkling the remaining crumble mixture over the peaches.
- Place in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbling.
- Allow the bars to cool for at least 15 minutes before slicing.
Notes
Serve warm or at room temperature, and consider adding a scoop of vanilla ice cream on top for an extra treat.
