Ingredients
- 1 pound smoked kielbasa, sliced into ½-inch pieces
- 4 cloves garlic, minced (about 2 teaspoons)
- 3 tablespoons honey (60 ml)
- 2 tablespoons soy sauce (30 ml), low-sodium recommended
- 1 tablespoon apple cider vinegar (15 ml)
- 1 tablespoon olive oil (15 ml)
- 1 medium red bell pepper, sliced (about 150 g)
- 8 ounces green beans, trimmed (225 g)
- 2 stalks green onions, sliced
- ¼ teaspoon crushed red pepper flakes (optional)
- Black pepper, to taste
Instructions
- Prep your ingredients: slice kielbasa into ½-inch pieces, mince garlic, slice bell pepper, trim green beans, and slice green onions.
- Heat olive oil in a large skillet over medium-high heat. Add kielbasa slices in a single layer and sear for 3-4 minutes per side until caramelized. Do in batches if needed.
- Push kielbasa to one side of the skillet. Add bell peppers and green beans to the other side. Cook, stirring occasionally, until veggies are tender-crisp and slightly blistered, about 4 minutes.
- Stir minced garlic into the skillet with kielbasa and veggies. Cook for about 30 seconds until fragrant, being careful not to burn.
- Add honey, soy sauce, and apple cider vinegar. Stir to coat kielbasa and veggies evenly with the sauce.
- Reduce heat to medium-low and let the sauce simmer gently, stirring occasionally, until it thickens and becomes sticky, about 3-4 minutes.
- Season with black pepper and crushed red pepper flakes if using. Toss in sliced green onions and stir to combine.
- Serve hot directly from the pan, optionally with steamed rice or noodles.
