- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
- 1/2 cup softened butter (for frosting)
- 1/4 cup cocoa powder (for frosting)
- 3 cups powdered sugar (for frosting)
- 1/4 cup milk (for frosting)
- 1 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan with butter or cooking spray.
- In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 cup of granulated sugar, and 1/2 cup of unsweetened cocoa powder until combined.
- Add 1/2 cup of melted butter, 2 large eggs, and 1 teaspoon of vanilla extract. Mix until smooth and well combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 20-25 minutes. A toothpick inserted should come out with a few moist crumbs.
- Once baked, remove from the oven and immediately sprinkle 2 cups of mini marshmallows over the hot cake. Return to the oven for an additional 5 minutes, just until the marshmallows puff up and turn golden.
- While the marshmallows are baking, prepare the frosting by combining 1/2 cup of softened butter, 1/4 cup of cocoa powder, and 3 cups of powdered sugar in a bowl. Add 1/4 cup of milk and beat until creamy.
- Once the marshmallows are out, let the cake cool slightly before spreading the frosting over the top.
- Sprinkle 1 cup of chopped pecans over the frosting if desired. Let it cool completely before slicing into squares.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Store leftovers in an airtight container in the refrigerator for up to a week.
