Description

This Mississippi Mud Cake is a decadent treat that combines layers of moist chocolate cake, gooey marshmallows, and a luscious chocolate frosting. It’s perfect for any occasion and sure to become a beloved favorite.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 1/2 cup softened butter (for frosting)
  • 1/4 cup cocoa powder (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/4 cup milk (for frosting)
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan with butter or cooking spray.
  2. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 cup of granulated sugar, and 1/2 cup of unsweetened cocoa powder until combined.
  3. Add 1/2 cup of melted butter, 2 large eggs, and 1 teaspoon of vanilla extract. Mix until smooth and well combined.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake in the preheated oven for 20-25 minutes. A toothpick inserted should come out with a few moist crumbs.
  6. Once baked, remove from the oven and immediately sprinkle 2 cups of mini marshmallows over the hot cake. Return to the oven for an additional 5 minutes, just until the marshmallows puff up and turn golden.
  7. While the marshmallows are baking, prepare the frosting by combining 1/2 cup of softened butter, 1/4 cup of cocoa powder, and 3 cups of powdered sugar in a bowl. Add 1/4 cup of milk and beat until creamy.
  8. Once the marshmallows are out, let the cake cool slightly before spreading the frosting over the top.
  9. Sprinkle 1 cup of chopped pecans over the frosting if desired. Let it cool completely before slicing into squares.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Store leftovers in an airtight container in the refrigerator for up to a week.
