  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil, for garnish

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Dredge lightly in flour to coat.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, until golden brown. Remove chicken and set aside (it won’t be fully cooked yet).
  3. Lower heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Stir in chicken broth, scraping up any browned bits from the pan.
  5. Pour in heavy cream and parmesan cheese, whisking until smooth. Add sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes, stirring occasionally, until sauce thickens.
  6. Return chicken to the skillet, nestling it into the sauce. Spoon sauce over the top. Cover and simmer on low for 10-12 minutes, until chicken is cooked through (internal temp: 165°F).
  7. Garnish with fresh basil and extra parmesan if desired. Serve hot with pasta, rice, mashed potatoes, or bread.

Notes

For gluten-free, swap flour for cornstarch or a gluten-free blend. For dairy-free, use full-fat coconut milk and a dairy-free parmesan alternative. Chicken thighs can be used instead of breasts; adjust cooking time as needed. Sauce consistency can be adjusted with extra broth or cream. Leftovers keep well and sauce thickens in the fridge—add a splash of milk or broth when reheating.
