  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped (jarred or packed in oil, drained)
  • 1/2 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese (fresh preferred)
  • 2 cloves fresh garlic, minced
  • 1 cup fresh baby spinach (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  2. In a mixing bowl, whisk together heavy cream, chicken broth, Parmesan cheese, sun-dried tomatoes, minced garlic, and red pepper flakes.
  3. Place seasoned chicken in the bottom of the slow cooker. Pour sauce mixture over the chicken, ensuring it is mostly covered.
  4. Cover and cook on LOW for 2 to 3 hours (1.5 hours for thighs), until chicken is fork-tender and sauce is bubbling.
  5. If using spinach, stir it in for the last 10 minutes of cooking to wilt.
  6. Remove chicken carefully with tongs or a spatula. Whisk the sauce in the slow cooker to blend any cheese or tomato bits.
  7. Spoon sauce over chicken, sprinkle with extra Parmesan if desired, and serve hot.

Notes

Season the chicken well for best flavor. Use freshly grated Parmesan for a smooth sauce. If sauce is too thin, remove chicken and cook sauce uncovered for 10-15 minutes to thicken. For dairy-free, use coconut cream and nutritional yeast. Chicken thighs can be used for a juicier result and cook faster. Freeze leftover sauce for pasta or veggies.
