- 2 cups cooked rice
- 1 lb lean ground beef
- 2 tbsp taco seasoning
- 1 cup canned black beans, drained and rinsed
- Shredded lettuce
- Diced tomatoes
- 1 cup shredded cheese (Cheddar or Mexican blend)
- Sour cream or plain Greek yogurt
- Salsa
- 1 cup crushed Doritos (Nacho Cheese flavor recommended)
- Avocado slices (optional)
- Jalapeños (optional)
- Cilantro (optional)
Instructions
- Cook 2 cups of your favorite type of rice. Fluff it with a fork and keep it warm.
- Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as you go (about 5-7 minutes). Drain any excess grease.
- Stir in taco seasoning and 1/4 cup water. Let it simmer for 2-3 minutes until the beef is coated and fragrant.
- In the same skillet, add the rinsed black beans. Stir and heat for 2 minutes.
- While the beef cooks, chop your lettuce, dice your tomatoes, shred your cheese, and crush the Doritos.
- Start with a scoop of rice as your base. Add the taco beef and beans, then layer on lettuce, tomatoes, cheese, sour cream, and salsa. Finish with a generous sprinkle of crushed Doritos.
