Ingredients
- 1 lb ground chicken
- 1 lemon (zest and juice)
- 1 tablespoon fresh rosemary, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs (50g)
- 1 large egg
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: 2 tablespoons fresh parsley, chopped
Instructions
- Prep your ingredients by zesting and juicing the lemon, chopping rosemary and parsley, and mincing garlic. Measure breadcrumbs and crack the egg into a bowl.
- In a mixing bowl, combine ground chicken, lemon zest and juice, chopped rosemary, garlic, breadcrumbs, egg, salt, and pepper. Mix gently until just combined.
- Divide the mixture into 6 equal portions and shape each into a ¾-inch thick patty. Wet hands slightly to prevent sticking. Add more breadcrumbs if mixture is too wet.
- Heat olive oil in a skillet over medium heat. Cook patties for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Avoid pressing down on patties while cooking.
- Remove patties and let rest for 2 minutes. Sprinkle with fresh parsley if desired and serve.
Notes
Use fresh lemon zest and juice for best flavor. Avoid overmixing the meat to keep patties tender. Wet hands when forming patties to prevent sticking. Cook patties without pressing down to retain juiciness. For gluten-free, substitute breadcrumbs with almond flour or gluten-free panko. Patties can be baked at 400°F for 15-18 minutes as an alternative cooking method.
