Instructions

  1. Preheat your oven to 450°F (230°C). Place your empty muffin tin in the oven to heat up while you prepare the batter.
  2. In a large mixing bowl, whisk together the eggs, milk, and salt until combined. Gradually add the flour, whisking constantly to avoid lumps. The batter should be smooth and slightly thick.
  3. Cover the bowl with a kitchen towel and let the batter sit at room temperature for 10 minutes to let the flour absorb the liquid.
  4. Carefully remove the hot muffin tin from the oven. Add about 2 tablespoons of oil or beef drippings to each cup. It should sizzle.
  5. Pour the batter evenly into the cups, filling each about halfway. Work quickly so the tin doesn’t cool down.
