- 2 packages of Jello (lime and cherry or other flavors)
- 2 cups boiling water
- 2 cups cold water
- 1 cup crushed pineapple (drained)
- 1 cup mini marshmallows
- 1 cup whipped topping (Cool Whip or homemade whipped cream)
- 4 ounces cream cheese (softened)
- 1/2 cup chopped walnuts (optional)
Instructions
- Dissolve one package of Jello in 1 cup of boiling water. Stir until completely dissolved, then add 1 cup of cold water. Pour into the mold and refrigerate for about 45 minutes, or until slightly set but still sticky to the touch.
- Sprinkle the drained crushed pineapple evenly over the first Jello layer.
- In a mixing bowl, beat softened cream cheese until smooth. Fold in the whipped topping and mini marshmallows. Spread this mixture gently over the pineapple layer. Refrigerate for another 30 minutes.
- Dissolve the second package of Jello in 1 cup boiling water, then add 1 cup cold water. Let it cool slightly before pouring it gently over the creamy layer. Refrigerate for at least 2 hours, or until fully set.
- To unmold, dip the mold briefly in warm water (10-15 seconds) and invert onto a serving plate. Garnish with chopped walnuts, whipped cream, or festive sprinkles if desired.
Notes
Ensure each layer is fully set before adding the next to avoid mixing. Drain pineapple thoroughly to prevent runny Jello.
