Ingredients

  • 2 tablespoons butter
  • 8 oz cremini mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 4 slices Swiss cheese
  • 4 thick slices of bread (sourdough or rustic white)
  • Salt
  • Pepper

Instructions

  1. Slice the mushrooms and onions thinly. If using block cheese, grate or slice it.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Add the sliced mushrooms and onions, plus a pinch of salt and pepper. Cook, stirring occasionally, until the mushrooms are golden and the onions are soft and caramelized. Remove from the skillet and set aside.
  3. Spread the remaining butter on one side of each bread slice. Heat the skillet over medium heat and place two slices of bread, butter-side down, in the skillet. Top each with a slice of Swiss cheese, then pile on the mushrooms and onions. Finish with another slice of cheese and the second piece of bread (butter-side up).
  4. Press down gently with a spatula and cook until the bottom slice is golden brown, about 2-3 minutes. Flip carefully and cook the other side until golden and the cheese is melted.
  5. Remove the sandwiches from the skillet, slice them in half if desired, and serve warm.
