A cheesy, savory sandwich featuring sautéed mushrooms, melted Swiss cheese, and buttery toasted bread. Perfect for a quick lunch or cozy dinner.

- 2 tablespoons butter
- 8 oz cremini mushrooms, sliced
- 1 medium onion, thinly sliced
- 4 slices Swiss cheese
- 4 thick slices of bread (sourdough or rustic white)
- Salt
- Pepper
Instructions
- Slice the mushrooms and onions thinly. If using block cheese, grate or slice it.
- Heat 1 tablespoon of butter in a large skillet over medium heat. Add the sliced mushrooms and onions, plus a pinch of salt and pepper. Cook, stirring occasionally, until the mushrooms are golden and the onions are soft and caramelized. Remove from the skillet and set aside.
- Spread the remaining butter on one side of each bread slice. Heat the skillet over medium heat and place two slices of bread, butter-side down, in the skillet. Top each with a slice of Swiss cheese, then pile on the mushrooms and onions. Finish with another slice of cheese and the second piece of bread (butter-side up).
- Press down gently with a spatula and cook until the bottom slice is golden brown, about 2-3 minutes. Flip carefully and cook the other side until golden and the cheese is melted.
- Remove the sandwiches from the skillet, slice them in half if desired, and serve warm.
