These pan-banging snickerdoodles combine crispy, caramelized edges with soft, chewy centers, pockets of gooey toffee, and a cinnamon-sugar coating for a truly indulgent cookie experience.

- 2 ¼ cups (280g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (226g) unsalted butter, room temperature
- 1 ½ cups (300g) granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- ¾ cup (135g) toffee bits
- 2 teaspoons ground cinnamon
- ¼ cup (50g) granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2 minutes.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the toffee bits by hand.
- Scoop out dough using a cookie scoop or tablespoon and roll into balls. Coat each ball in the cinnamon-sugar mixture.
- Arrange dough balls on prepared baking sheets, spacing them at least 3 inches apart. Bake for 8 minutes, then lift the baking sheet about 2 inches and drop it back onto the oven rack. Repeat this every 2 minutes until the cookies are golden and rippled, about 12-14 minutes total.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
