Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F/43°C), sugar, and yeast. Stir gently and let sit until foamy, about 5 minutes.
  2. Make the dough: Add 3 cups (360g) flour, salt, and 3 tablespoons (43g) softened butter to the yeast mixture. Stir until shaggy dough forms. Knead on floured surface for 6-7 minutes until smooth and elastic, adding flour as needed. Alternatively, use a stand mixer with dough hook on medium speed for 5 minutes.
  3. First rise: Place dough in bowl, cover with damp towel or plastic wrap, and let rise in warm spot until doubled, about 60-75 minutes.
  4. Prepare garlic herb butter: Melt remaining 3 tablespoons (43g) butter in a small pan over low heat. Add minced garlic and cook gently for 1-2 minutes until fragrant. Stir in chopped fresh herbs and olive oil. Remove from heat and let cool slightly.
  5. Roll out dough: Punch down dough and roll on floured surface into 12×16-inch (30x40cm) rectangle about ¼ inch thick.
  6. Spread garlic herb butter evenly over dough surface.
  7. Form spiral: Roll dough tightly from long edge into a log. Pinch seams to seal. Coil log into spiral shape and tuck end underneath.
