Description

Soft, chewy chocolate cookies with a warm, gooey molten chocolate center—perfect for any occasion and surprisingly easy to make.


Ingredients

  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ½ cup (115g) unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup (135g) semi-sweet chocolate chips
  • ¼ tsp salt
  • ½ tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each round until smooth.
  7. Scoop about 1 tablespoon of cookie dough and flatten it slightly in your hand. Add about 1 teaspoon of melted chocolate to the center, then top with another tablespoon of dough. Seal the edges.
  8. Place the cookies on the prepared baking sheet, leaving about 2 inches between them. Bake for 10-12 minutes, or until the edges are set but the centers are slightly soft.
  9. Let the cookies cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm.
