A quick and easy Italian appetizer dip combining olive oil, garlic, herbs, and Parmesan cheese for a flavorful bread dipping experience.

- ½ cup extra virgin olive oil (120 ml)
- 2 cloves fresh garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ¼ teaspoon crushed red pepper flakes (adjust to taste)
- 2 tablespoons Parmesan cheese, finely grated (optional)
- ¼ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- Mince the garlic cloves finely or use a garlic press. Measure out dried herbs, red pepper flakes, salt, and pepper.
- Pour the extra virgin olive oil into a small mixing bowl. Add the minced garlic and stir gently. Let the garlic sit in the oil for a few minutes to mellow the sharpness.
- Sprinkle in oregano, basil, crushed red pepper flakes, salt, and black pepper. Stir until the oil looks fragrant and speckled with herbs.
- Add the finely grated Parmesan cheese and fold it in gently (optional).
- If possible, cover the bowl and let the oil rest at room temperature for 5–10 minutes to allow flavors to marry.
- Pour the oil into a shallow dish or ramekin and serve alongside warm, crusty Italian bread.
Notes
Letting the oil rest for 5–10 minutes enhances flavor. Use fresh garlic for best taste. Adjust red pepper flakes to your heat preference. Grate your own Parmesan for better texture. Serve with warm bread for optimal dipping experience.
