Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 6 oz (170g) block feta cheese
- 1/4 cup (60ml) hot honey (or regular honey mixed with red pepper flakes)
- 2 tablespoons (30ml) extra virgin olive oil
- 3 garlic cloves, minced
- 1 tablespoon (15ml) lemon juice
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon fresh thyme, chopped (or dried thyme)
- Salt (about 1 teaspoon)
- Black pepper (1/2 teaspoon)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with 1 tablespoon olive oil.
- Mince garlic and chop thyme while oven preheats.
- Place chicken breasts in a mixing bowl. Add 1 tablespoon olive oil, minced garlic, lemon juice, salt, black pepper, and half the red pepper flakes. Toss to coat evenly.
- Arrange chicken breasts evenly spaced in the baking dish.
- Bake uncovered for 20 minutes until chicken starts to turn golden.
- Remove from oven and sprinkle crumbled or chopped feta evenly over chicken.
- Drizzle hot honey on top, sprinkle remaining red pepper flakes and fresh thyme.
- Return to oven and bake for another 5 minutes until feta is soft and slightly golden.
- Check chicken doneness: internal temperature should reach 165°F (74°C) or juices run clear.
- Let chicken rest for 5 minutes before serving. Optionally drizzle extra hot honey before plating.
