Instructions
- Preheat your oven to 350°F (175°C). Line your cupcake pan with paper liners and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs, one at a time, mixing well after each addition. Then, add the honey and vanilla extract.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
- Gently fold in the diced fresh peaches until evenly distributed throughout the batter.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool in the pan for 5 minutes before transferring to a cooling rack.
- While the cupcakes cool, beat together the cream cheese and softened butter until smooth. Gradually add the powdered sugar, mixing until fluffy. Add heavy cream to reach your desired consistency.
- Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
- Top each cupcake with a slice of fresh peach and a drizzle of honey.
