A quick and easy honey lime chicken recipe that combines tangy lime and sweet honey for a fresh, flavorful weeknight dinner. Perfectly juicy chicken breasts glazed with a bright, savory sauce.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 pounds / 680g)
- 1/4 cup honey (85g)
- Fresh juice from 2 limes (about 1/4 cup / 60ml)
- 3 cloves garlic, minced (about 1 tablespoon)
- 2 tablespoons olive oil (30ml)
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh cilantro, chopped (optional)
- 2 green onions, sliced (optional)
Instructions
- In a small bowl, whisk together honey, fresh lime juice, minced garlic, red pepper flakes (if using), and a pinch of salt and pepper to make the marinade.
- Place chicken breasts in a shallow dish or zip-top bag. Pour half of the marinade over the chicken, reserving the other half for later. Coat each piece well and let sit at room temperature for at least 10 minutes (up to 30 minutes if time allows).
- Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken breasts and cook undisturbed for 4-5 minutes until the bottom is golden and caramelized.
- Flip chicken and cook another 4-5 minutes until cooked through and juices run clear.
- Pour the reserved marinade over the chicken in the skillet. Reduce heat to medium-low and simmer for 3-4 minutes, spooning sauce over chicken frequently to thicken glaze.
- Turn off heat and sprinkle chopped cilantro and sliced green onions over the chicken. Let rest for 1-2 minutes to soak up juices.
- Serve immediately over steamed rice, quinoa, or alongside roasted vegetables.
Notes
Use fresh lime juice for best flavor. Marinate chicken for at least 10 minutes to enhance juiciness. Use medium-high heat to get a caramelized crust without burning the honey. Check doneness with a meat thermometer (165°F/74°C). Reserve half the marinade to make a glaze. Adjust sweetness and tang by adding more honey or lime juice as desired. Leftovers keep well for up to 3 days in the fridge; reheat gently with added water or broth to maintain moisture.
