  • 2 pounds beef chuck roast or stew meat
  • 1/2 cup honey
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1/3 cup low-sodium soy sauce
  • 1/2 cup beef broth
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water (for slurry)
  • 2 green onions, sliced (optional garnish)

Instructions

  1. Trim any excess fat from the beef and cut into large 2-inch chunks.
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, beef broth, rice vinegar, ground ginger, and red pepper flakes.
  3. Place the beef chunks in the slow cooker and pour the sauce mixture evenly over the top. Stir gently to coat.
  4. Cover and cook on low for 6 to 8 hours until beef is tender.
  5. About 30 minutes before serving, mix cornstarch with cold water to make a slurry. Stir into the slow cooker, cover, and cook on high for 30 minutes to thicken the sauce.
  6. Serve sprinkled with sliced green onions over steamed rice, mashed potatoes, or roasted vegetables.

Notes

Optional to sear beef before slow cooking for extra flavor. Use fresh garlic for best aroma. Can add vegetables halfway through cooking. Freeze leftovers in airtight containers for up to 3 months.
