  • 1 cup (190g) uncooked jasmine or basmati rice
  • 1 1/2 cups (360ml) chicken broth, low sodium

  • 2 stalks green onions, sliced (about 20g), optional
  • Optional add-ins: red pepper flakes, lime juice

Instructions

  1. Rinse 1 cup of rice under cold water until it runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice and 1 1/2 cups chicken broth. Bring to a boil over medium-high heat, then reduce heat to low and cover. Simmer gently for 15 minutes without peeking.
  3. Remove from heat and let rice rest covered for 5 minutes. Fluff with a fork before serving.
  4. While rice cooks, slice chicken breasts into bite-sized pieces and season generously with salt and pepper.
  5. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer without crowding the pan.
  6. Cook chicken for 3-4 minutes without moving to get a golden crust, then flip and cook another 3 minutes until cooked through.
  7. Add minced garlic during the last minute of cooking, stirring frequently to avoid burning.
  8. Reduce heat to medium-low. Pour in 1/2 cup BBQ sauce and 1/4 cup honey into the pan with chicken. Stir well to coat all pieces.
  9. Let sauce bubble gently for 2-3 minutes until it thickens and caramelizes slightly.
