Ingredients
Scale
- 2 cups granulated sugar
- 1 cup light corn syrup
- ½ cup water
- 1 cup roasted pecans, roughly chopped
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
Instructions
- Prepare your workspace: Line a baking sheet with a silicone mat or buttered parchment paper. Set aside.
- Cook the sugar mixture: In a heavy-bottomed saucepan, combine sugar, corn syrup, and water over medium heat, stirring until dissolved.
- Bring to a boil: Stop stirring and let the mixture cook until it reaches 280°F on a candy thermometer (soft-crack stage).
- Add pecans & butter: Stir in roasted pecans and butter, continuing to cook until the mixture reaches 300°F (hard-crack stage).
- Finish with vanilla & baking soda: Remove from heat and quickly stir in vanilla extract, baking soda, and salt. The mixture will bubble up—this creates a light, crisp texture!
- Pour & spread: Immediately pour the brittle mixture onto the prepared baking sheet, using a spatula to spread it thin.
- Cool & break: Let the brittle cool completely (about 30 minutes), then break it into bite-sized pieces.
- Store & enjoy: Store in an airtight container at room temperature for up to 3 weeks.
Notes
- For extra flavor, add a pinch of cinnamon or a splash of bourbon.
- Avoid humid environments when making brittle—it can become sticky.
