  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 3 medium carrots, chopped
  • 2 stalks celery, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp Italian seasoning
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Season beef with salt and pepper, then sear for 4-5 minutes until browned. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Cook for about 5 minutes, stirring occasionally, until softened. Add garlic and cook for 1 more minute.
  3. Pour in beef broth, diced tomatoes, and tomato paste. Stir well. Add Worcestershire sauce, bay leaves, Italian seasoning, red pepper flakes (if using), and browned beef. Bring to a gentle boil.
  4. Lower heat to a simmer and add diced potatoes. Cover and cook for 30-40 minutes, or until beef is tender and potatoes are cooked through.
  5. Taste and adjust seasoning if needed. Remove bay leaves before serving. Ladle into bowls and enjoy warm.
