- 2 medium ripe avocados
- ½ cup (75g) crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 1 small garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 2 tablespoons chopped fresh parsley or cilantro (optional)
- Salt, to taste
- Black pepper, to taste
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash with a fork until mostly smooth but still a bit chunky.
- Crumble the feta cheese over the mashed avocado without mixing it in to keep pockets of salty feta.
- Add the minced garlic, fresh lemon juice, and olive oil. Stir gently to combine.
- Season with salt and black pepper to taste, keeping in mind feta is salty. Add chopped herbs if using.
- Give everything a final gentle stir, taste, and adjust seasoning with more lemon juice or olive oil if desired.
Notes
Avoid over-mashing the avocado to keep some texture. Use fresh lemon juice to prevent browning. Rinse brined feta briefly to reduce saltiness if desired. Serve immediately or chill briefly, best eaten within 24 hours. Press plastic wrap directly on the dip surface to prevent browning.
