  • 2-inch piece ginger, peeled and sliced
  • 1 tablespoon ground turmeric or 2-inch piece fresh turmeric root, sliced
  • 1 medium onion, quartered
  • 2 large carrots, chopped into chunks
  • 2 stalks celery, chopped
  • A handful of kale, spinach, or parsley
  • A couple of slices of lemon
  • 23 bay leaves
  • 1 teaspoon black peppercorns, whole
  • 1 teaspoon salt (adjust to taste)
  • 8 cups water

Instructions

  1. Peel and smash the garlic, slice the ginger and turmeric, chop the veggies into chunks, and slice the lemon (Prep time: 10 minutes).
  2. Add all the ingredients to your stockpot. Pour in the water—it should cover everything by at least an inch (Combine time: 5 minutes).
  3. Place the pot over high heat and bring the water to a rolling boil (Boil time: 10 minutes).
  4. Lower the heat to a gentle simmer and cover the pot. Let the flavors meld together for 1 hour, stirring occasionally.
  5. Remove the pot from heat and let it cool slightly. Use a fine mesh strainer or cheesecloth to strain out the solids.
  6. Ladle the broth into bowls or mugs. Sip it as is, or use it as a base for soups, stews, or risotto. Garnish with fresh parsley or a squeeze of lemon juice.
