Description

  • 4 salmon fillets (about 6 ounces each / 170g each), skin-on
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (about 2 teaspoons)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Rinse salmon fillets and pat dry with paper towels. Season both sides generously with salt and black pepper. Set aside.
  2. In a small bowl, whisk together Dijon mustard, honey, olive oil, fresh lemon juice, and minced garlic until smooth and glossy. Adjust honey to taste if desired.
  3. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly oil the grates with a paper towel dipped in oil to prevent sticking.
  4. Place salmon fillets skin-side down on the grill. Brush half the Dijon mustard sauce generously over the top of each fillet. Grill for 4-5 minutes without moving.
  5. Carefully flip the fillets and brush the remaining sauce on the exposed side. Grill for another 4-5 minutes, or until salmon flakes easily with a fork and is opaque throughout.
  6. Remove salmon from grill and let rest for 2 minutes to redistribute juices. Sprinkle fresh parsley on top before serving.

Notes

If you don’t have a grill, bake salmon at 400°F (205°C) for 12-15 minutes, then broil for 2-3 minutes, brushing sauce before baking and after broiling. Avoid flipping salmon multiple times to prevent breaking. Use fresh lemon juice for best flavor. Sauce can be mixed a few hours ahead but add lemon juice and garlic just before grilling. For extra zing, add whole grain mustard or smoked paprika.
